The Food Science and Safety Certificate program offered by The American Women’s College at Bay Path University provides the science courses food safety professionals need to advance their careers. As one of the only programs of its kind in the country, it delivers the 30 credit hours of science courses required to hold supervisory positions in food safety and inspection. The program is entirely online, making it readily accessible to working professionals.
Dr. Salah Mahgoub is a key instructor in the certificate program. A Certified Food Scientist (CFS), he has taught at Bay Path University for eight years and is instrumental in providing meaningful, hands-on laboratory experiences to food safety students studying remotely.
Mahgoub teaches the fully online courses FSS 120 Foodborne Microorganisms and FSS 150 Foodborne Diseases. Both courses require hands-on laboratory work. Five years ago, he revamped the courses’ laboratory components using customized lab kits from Carolina Distance Learning®.
From the start, Dr. Mahgoub realized the importance of having a lab kit customized for the highly specialized food microbiology courses. Carolina’s user-friendly website made it easy for him to browse the collection of labs and select just the right ones for his class. “The labs are more advanced,” he explains, “yet they are approachable and understandable.” This vital combination allows students to develop the scientific skills needed for their careers.
Dr. Mahgoub and his students find the lab kits’ instructions thorough and straightforward and the equipment and materials high quality. These are crucial characteristics when students are conducting the experiments on their own. And yet, mistakes do happen, so Mahgoub is happy to report that “Carolina provides prompt support to any student who hits a snag with a lab and needs replacement materials to proceed.”
In fact, Carolina provides a dedicated point of contact for Dr. Mahgoub and his students so they can quickly get any support they need. Mahgoub is also impressed by Carolina’s openness to feedback. Over the years, he has seen Carolina use such feedback to continuously improve their labs, clearly demonstrating their commitment to teachers and students for the long term.
Dr. Mahgoub is delighted to provide his students with interesting, challenging labs that build their microbiology skills and knowledge. Students are happy to get the hands-on learning they need to build their qualifications and advance their careers—all from home!
